Lemon Garlic Soup Ingredients (4-6 servings)1 Tosp olive oil4 garlic cloves1 red onion0.5 tsp paprika1 tsp dried rosemary1 tsp dried thyme0.5 tsp garlic powder¼ tsp chili flakes1.2 L (5 cups) cooked butter beans1 L (4 cups) vegetable broth salt & black pepper, to taste Juice from 1 lemon + zestInstructionsHeat the olive oil in a pot over medium heat, add the onion sauté for about 1 minute, add the garlic and sauté for another minute.Add the spices, butter beans and broth.Use an immersion blender and blend until smooth.Let it simmer for 10 minutes, stirring occasionally.Add lemon juice and zest.Add more salt and pepper to taste.
